Zucchini Fries
These are zucchinis cut like French fries but are grilled not fried. They are also cooked on a grill mat (a black one in this cast). The reason for the grill mat is that it holds the seasonings on better than a grate. These can be served hot or room temperature and as a side dish or an appetizer.
2 medium zucchinis
Olive oil for brushing
Kosher salt to taste
Coarse ground black pepper to taste
Dried oregano to taste
Dried basil to taste
Pecorino Romano to taste
Fresh lemon juice to taste
Remove the ends of the zucchini and slice them lengthwise into quarters. Place them on a plate skin side up and brush the skin with oil.
Turn skin side down and brush both cut sides with oil. Sprinkle them with seasonings (salt through basil).
Prepare the grill for a medium-hot fire. Place the grill mat on the cooking grates and place the zucchini skin side down on the mat. Close the lid and cook until the zucchini are done (limp), approximately 15 minutes. Grasp the end of a zucchini with tongs and gently shake to test for doneness. Sprinkle the zucchini with cheese and close the lid for 1 minute to melt the cheese.
Remove the zucchini to serving plates and squeeze lemon juice over them.
