Sweet & Spicey Grilled Chicken
It is interesting how certain seasonings go together so well, such as sweet and spicy or sweet and sour. This combines sweet and spicey along with the savory flavor of grilled chicken.
1 skinless, boneless chicken half breast
Canola oil for brushing
Salt and black pepper to taste
Prepare the Finishing Sauce (recipe follows). Pound the chicken breast, between two pieces of plastic wrap, to a uniform thickness of approximately 1/2 inch. Prepare the grill for hot direct cooking. Brush with oil and season with salt and pepper. Grill the chicken for 4 minutes per side, then an additional 2 minutes on the first side (lid closed).
Remove the chicken to a platter and brush both sides with the Finishing Sauce. Do not do this while the chicken is on the grill or the honey will quickly burn.
Finishing Sauce
1/4 cup honey
1/4 to 1/2 teaspoon Sriracha sauce
2 teaspoons rice wine vinegar
1/4 teaspoon sesame oil
Combine all ingredients and blend. Make sure that the last 3 ingredients are thoroughly blended with the honey.
