Spiced and Grilled Pork Chops
Grilled pork chops are lean, tasty, and easy to prepare. Simply brushing with oil, salt and pepper are sufficient but a wide variety of spices go well with pork. Coriander and cumin go with any meat, as does paprika. Fennel is the basic flavoring of Italian pork sausage. The sugar in this recipe is added to enhance browning.
2 1-inch-thick boneless pork chops
1 tablespoon brown sugar
1/2 teaspoon ground fennel
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground paprika
1/2 teaspoon black pepper
3/4 teaspoon salt
Olive oil for brushing
Trim peripheral fat from the chops. Combine the next 7 ingredients (sugar through salt) and thoroughly mix. Apply the seasoning mix to both sides of the chops and let stand at room temperature for 30 minutes.
Prepare the grill for hot indirect cooking. Gently brush the chops with oil being careful not to remove the seasoning. Grill the chops for 5 minutes per side directly over the fire. Move the chops to indirect for 3 minutes on each side, or until done (do not overcook).
