Pork Sirloin with Memphis-style BBQ Sauce
Pork sirloin steaks are lean, tasty, and grill quickly. They go with virtually any type of barbecue sauce.
3 to 4 pork sirloin steaks
Salt to taste or Creole Seasoned Salt
Fresh ground black pepper
Prepare the barbecue sauce (recipe follows). This will make far more sauce than required for this recipe, but it will keep indefinitely without refrigeration. Prepare the grill for hot direct cooking. Season the steaks.
Grill directly over the fire (lid closed) for 3 minutes, turn and baste with sauce. Grill for 3 minutes on the other side and remove the steaks.
Liberally brush both sides with sauce and serve.
Memphis-style Barbecue Sauce
1/2 cup distilled vinegar
1/2 cup ketchup
1/2 cup water
1 teaspoon brown sugar
1 to 2 teaspoons Tabasco-style red pepper sauce
1/4 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon Worcestershire sauce
Combine all ingredients in a small sauce pan and simmer, not boil, for 10 minutes. makke sure that the ketchup is completely disolved.
