Latin Grilled Pork Cube Steaks
Cube steaks hold seasonings and grill quickly. The caramelized onions, if added, take longer to prepare. Black beans and yellow rice are as Latin as you can get.
3 pork cube steaks
Olive oil for brushing
1 1/2 teaspoons chili powder
1 1/2 teaspoons powdered cumin
1 1/2 teaspoons powdered coriander
Salt and pepper to taste
Prepare the caramelized onions , black beans, and yellow rice if desired (recipes follows). Prepare the grill for hot direct cooking. Brush the steaks with oil and season with chili powder, cumin, coriander, salt, and pepper.
Grill directly over the fire, lid closed, for 2 minutes per side. Remove to serving dishes and top with onions.
Black Beans and Yellow Rice
2 cans black beans
1/2 large green bell pepper, diced
1/2 large yellow onion, diced
1 tablespoon olive oil
1 package yellow rice
Drain one can of the beans and combine with the other can in a medium sized pot. Add the next three ingredients (pepper through oil) and stir to combine. Bring to a boil, reduce the heat and simmer for 30 to 45 minutes, Cooking the beans this way adds significant flavor.
Prepare the rice according to the directions on the package
