Hamburgers with Mississippi Comeback Sauce
This recipe is about Mississippi Comeback Sauce, the hamburger is simply an excuse to make it. The sauce originated in a Jackson, Mississippi Greek restaurant. It was named because it was thought to be so good that customers would come back for more. Numerous versions have since been developed throughout the South. It is used as a spread or a dipping sauce, and is a good sauce for vegetables, both grilled and raw.
Sliced onions
Sliced tomatoes
Sliced dill pickles
2 hamburger patties
2 hamburger buns
Salt and pepper to taste
Prepare the Comeback Sauce (recipe follows) and condiments, if desired, or prepare the condiments of your choice. Prepare the grill for hot direct cooking. Season the meat and cook with lid closed, for 4 minutes per side, then 2 more minutes on the first side for medium rare. Toast the buns directly over the fire for a few seconds, if desired. The recipe is for only two burgers, but you can expand to many.
Coat both halves of the buns with Comeback Sauce and assemble the burgers.
Mississippi Comeback Sauce
1/2 cup mayonnaise
1 tablespoon sweet chili sauce
1 tablespoon ketchup
1 1/2 teaspoons lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon paprika
1/4 – 1/2 teaspoon hot sauce
1/4 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dry mustard
1/4 teaspoon black pepper
Combine all ingredients and thoroughly mix. Refrigerate for at least 1 hour to allow the flavors to blend and blend again before serving.
