Grilled Zucchini with Feta Cheese
We purchased imported Greek feta for another recipe and thought it would jazz up the grilled zucchini we were going to have for supper.
2 medium to large zucchini
Olive oil for brushing
Salt and pepper of Creole Seasoned Salt to taste
Dried oregano to taste
Crumbled feta cheese to taste
Remove the ends of the zucchini and cut them in half lengthwise. Prepare the grill for hot direct cooking. Brush both sides of the zucchini with oil and season the cut side. Grill cut side down for 4 minutes, turn them and grill them for an additional 4 minutes cut side up.
Remove them to a serving platter and top with the feta cheese.
