Grilled Zucchini Canapés
Traditional canapés use bread or pastry as a base, but more recently a wide variety of bases are being used. A zucchini sliced crosswise is the ideal size. It should be grilled of course. This recipe is for just one zucchini so that any number of canapés can be prepared by the recipe (ideal for outdoor entertaining). Prepare the topping ahead of time, and grill the zucchini slices and spread them with topping as they come off the grill. This is quick, easy, and fast appetized for entertaining guests.
1 medium to large zucchini
Olive oil for brushing
Salt and pepper or Creole Seasoned Salt to taste
3 tablespoons drained fresh salsa
1/3 cup cream cheese
1 squeeze fresh lemon juice
Place the salsa in a small sieve and press out as much liquid as possible with the back of a spoon. Measure the 3 tablespoons of salsa from that just drained. Combine the salsa, cream cheese, and lemon juice. Thoroughly blend.
Prepare the grill for hot indirect cooking. Slice the zucchini crosswise into 1/2-inch-thick slices.
Brush both sides of the zucchini slices with oil and season one side.
Grill the zucchini, lid closed, seasoned side down for 4 minutes. Turn and grill for an additional 3 minutes. Spread toping on each zucchini slice and serve.
