Grilled Squash with Herbs
Summer squash are mild and are complimented by fresh herbs. They are delicious grilled with only oil, salt, and pepper, but the addition of herbs can add variety. Basil, thyme, and oregano are all good choices either mixed or paired with parsley.
2 medium sized yellow squash
Olive oil for brushing
Creole Seasoned Salt or table salt to taste
Coarse ground black pepper to taste
Prepare the Herb Topping (recipe follows). Remove the stem and blossom ends of the squash and slice in half, lengthwise. Brush both sides of the squash with oil and season the cut sides.
Prepare the grill for hot direct cooking. Grill the squash cut side down for 4 minutes, lid closed. Turn the squash and cook for an additional 4 minutes. Remove the squash to serving plates and top with the Herb Topping.
Herb Topping
2 tablespoons olive oil
Grated zest of 1 lemon
1 clove garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh mint, chopped
2 teaspoons fresh lemon juice
Pinch of salt
Pinch of black pepper
Combine all ingredients in a small sauce pan and simmer for 5 minutes.
