Grilled Sirloin Steak with Sauce Vert




Sirloin is a flavorful, yet somewhat tough steak that goes well with a sauce. This sauce is a bit different steak sauce, but the herbs and capers add a fresh taste to the heavier flavor of the meat.


2 1-inch thick sirloin steaks

Olive oil for brushing

Salt to taste

Coarse ground black pepper to taste


Prepare the Sauce Vert (recipe follows). Prepare the grill for hot direct cooking. Brush the steaks with oil and season. Grill the steaks for 3 minutes per side, lid closed. Serve with the Sauce Vert.





Sauce Vert





1/4 cup fresh parsley

1/4 cup fresh mint

1/4 cup fresh tarragon

1 1/2 teaspoon capers, drained

1 small shallot, chopped

2 tablespoons good quality olive oil

1/4 teaspoon salt

1/2 teaspoon lemon juice


Combine the first 5 ingredients (parsley through shallot) in a food processor and pulse until a coarse chop is produced. Add the remaining ingredients and process until smooth. Serve on top of the steaks.
