Grilled Shrimp with Jamacian Curried Mayonnaise
This sauce recipe is one of many variations of Jamaica curried mayonnaise and is recommended for a grilled shrimp appetizer. However, it goes equally well as a spread for a chicken or turkey sandwich. It is too spicey for grilled fish because it would hide their flavor.
2 dozen medium to large shrimp
Olive oil for brushing
Salt and pepper to taste.
Prepare the mayonnaise (recipe follows). It is best if prepared an hour or more ahead of time and refrigerated to allow the flavors to blend. Skewer the shrimp so they will lie flat on the grill. Prepare the grill for direct hot cooking. Brush the shrimp with oil and season. Grill the shrimp directly over the fire for 3 to 3 1/2 minutes per side, depending on size.
Jamaica Curried Mayonnaise
1/2 cup lite mayonnaise
1 1/4 teaspoon Madras curry powder
1 teaspoon grated fresh ginger
1/2 teaspoon powdered cinnamon
1/8 teaspoon cayenne
Combine all ingredients and stir to thoroughly blend.
