Grilled Pork Chops with Honey-soy Glaze

Sweet sauces go well with pork, as do sweet potatoes. The addition of soy sauce adds saltiness to balance the sweetness of the honey. This sauce can also be used as a marinade, but caution is required so as to not burn the honey.

2 boneless pork chops (3/4 to 1 inch thick)

1/4 cup honey

1 tablespoon soy sauce

Olive oil for brushing

Salt and coarse ground black pepper to taste

Combine the honey and soy sauce. Stir with a whisk to thoroughly combine. Trim the peripheral fat from the chops. Prepare the grill for hot indirect cooking. Brush the chops with oil and season with salt and pepper.

Grill the chops for 4 minutes per side directly over the fire, lid closed. Move the chops to indirect and continue cooking, lid closed, for an additional 3 to 4 minutes, until done.

Remove the cops from the grill and thoroughly cover with the Honey-soy Sauce.
