Grilled Pork Chops with Honey-soy Baste
Bone-in meat has more flavor than boneless and thicker pieces of meat retain more moisture when cooked. Thick bone-in pork chops are a delicious cut of meat and require little more than salt and pepper, but go well with subtle sweet and salty.
2 bone-in 1-inch-thick pork chops
Olive oil for brushing
Salt and coarse ground black pepper to taste
Prepare the basting sauce (recipe follows). Prepare the grill for hot indirect cooking. Brush the meat with oil and season.
Grill the chops directly over the fire for 3 minutes per side.
Move the chops to indirect, turn and baste. Cook for 3 additional minutes and baste. Remove the chops to a platter or the serving plates and baste again.
Basting Sauce
1/4 cup honey
2 tablespoons soy sauce
Combine both ingredients and stir until the honey is completely dissolved in the soy.
