Grilled Halloumi Cheese
Halloumi cheese, also known as Greek grilling cheese, is a high melting point, semi-hard, unripened cheese from Cyprus that is made from a mixture of goat and sheep's milk. It is chewy, slightly salty, and is commonly grilled or fried for an appetizer.
Halloumi cheese, cut into 1/4 inch thick slices
Good quality extra virgin olive oil
Fresh lemon juice
Chopped fresh oregano
Prepare the grill for medium-high direct cooking (400°F). Grill the cheese covered for 3 minutes per side directly over the fire.
Remove the slices to serving dishes. Lightly brush them with oil, squeeze lemon juice on them, and sprinkle with fresh oregano. Serve warm or room temperature.
