Garlic-rosemary Grilled Chicken
Chicken has become the go to protein for many families. Grilling and seasonings can be used to add variety to prevent burnout. This is a quick, flavorful, and spicey recipe.
1 boneless, skinless chicken half-breast
2 tablespoons olive oil
1-2 cloves garlic, minced
1 teaspoon chopped fresh rosemary
Zest of 1 lemon
1/2 -1 teaspoon red pepper flakes
1/2 teaspoon lemon juice
Salt to taste
Place the chicken between two pieces of plastic wrap and pound to a uniform thickness of approximately 1/2 inch thick. Combine the next 5 ingredients (oil through pepper flakes) in a small saucepan and sauté until fragrant (approximately 1 minute). Remove from the heat and let cool. Add the lemon juice and stir to mix. Prepare the grill for hot direct cooking. Brush both sides of the chicken with the flavored oil and season with salt.
Grill the chicken directly over the fire for 4 minutes per side, then 2 more minutes on the first side (lid closed).
