Garlic and Rosemary Pork
This recipe is for 3 thin pork chops. Its purpose was to test a new marinade for pork. The marinade is suitable for almost any lean cut of pork. I was specifically thinking of pork tenderloins and pork loin roasts, however the grilling requirements would be different for the latter.
Three thin pork chops
Salt and pepper to taste
Prepare the marinade (recipe follows). Place the marinade and meat in a zip-top plastic bag, zip the bag almost closed, expel as much air as possible, and zip the bag fully closed. Marinate at room temperature for 1 hour.
Prepare the grill for direct hot cooking. Place a grill mat over the fire with the chops on top and grill them for 3 1/2 minutes per side.
Marinade
1/4 cup chopped fresh rosemary
4 large cloves garlic, chopped
1/4 cup olive oil
Place all ingredients in a small food processor or blender and process at low speed until a smooth mixture is formed (about 30 seconds).
