Full English Breakfast
The composition of a “full English breakfast” (or fry-up) varies with time and location. but according to BBC Food a basic version consists of: 2 sausages, 2-3 rashers of bacon, 2 flat mushrooms, 1-2 ripe tomatoes, 1 thick slice of black pudding, 1 large egg, and 1 slice of toast. To prepare one in the U.S. requires some modifications. The sausage is of course pork, a rasher is one slice of English bacon which is leaner than ours, so Canadian bacon is substituted. The black pudding is essentially blood sausage. This version is also grilled on a grate rather than a griddle.
Breakfast for 2
4 large mushrooms, stems removed
2 medium tomatoes, halved crosswise
4 slices Canadian bacon
4 pork sausages (small links)
2 slices blood sausage, approximately 1/2 inch thick
2 slices whole grain bread
Olive oil for brushing
2 large eggs
Salt and pepper to taste
Prepare the grill for medium heat and direct cooking. Brush the mushrooms, tomatoes, bacon, blood sausage , and bread with oil. When the grill is ready, cook as follows directly over the fire, lid closed: it is easier to cook the above subjects in two batches. Cook the meat first and remove to a tray in a 170°F oven to hold warm. Cook the tomatoes, mushrooms, and toast while your assistant fries the eggs. Cooking times are listed below.
Canadian bacon – 1 1/2 minutes per side
Blood sausage – 4 minutes per side
Pork sausages – until browned on all sides (approximately 10 minutes)
Bread – 1 1/2 minutes per side
Tomatoes – 5 minutes, cut side down
Mushrooms – 5 minutes per side
Plate all items, salt and pepper according to taste. The major problem now is what to taste first and then next.
