Deer Burgers
I believe that lean ground venison and New Zealand lamb have far more flavor than lean ground beef. They are all healthy choices as far as red meat goes. A small amount of healthy oil (olive or Canola oil) adds flavor without significantly increasing the saturated fat.
1 pound lean ground venison
1 teaspoon olive or Canola oil
1/4 small yellow onion, minced
1/4 cup grated Pecorino Romano cheese
2 cloves garlic, minced or pressed
1 1/2 teaspoon dried parsley
1/4 teaspoon dried thyme
1 teaspoon salt
Fresh ground black pepper to taste
Combine all ingredients and fold repeatedly to thoroughly mix. Form into 3 to 4 patties and refrigerate for 30 minutes. Prepare the grill for hot direct cooking. Grill the burgers directly over the fire for 4 minutes per side, then an additional 2 minutes on the first side. The USDA maintains that ground meat should be cooked to medium to be safe, medium rare is your choice.
