Comfort Food
This is not a spectacular recipe, but most comfort foods are not. They are generally simple ones that one grows up with and remain entrenched in one’s mind as years go by, providing comfort. This is one of mine – chili dogs. It has however been upgraded from a boiled hot dog to a grilled one and a toasted bun, a significant improvement.
All beef hot dogs
Buns
Whole grained mustard
Diced onions
Canned chili, without beans
Heat the chili on the stove top over medium heat. Prepare the grill for hot direct cooking. Grill the buns directly over the heat for about 1 minute until toasted. Grill the dogs directly over the heat turning as required to blister on all sides (about 10 minutes).
Spread mustard on each bun and top with a dog. Add the onions and top with chili. Some people like to top with shredded sharp cheddar cheese. Bon Appetite.
I love the add on TV where a woman asks her husband – “did you light the grill for just one hot dog?” Yes, I have done that for lunch when my wife was elsewhere.
