Carne Asada
Carne Asada is simply marinated and grilled beef. Almost any steak can be used, in this case it is skirt steak. The skirt is a thin cut from the belly of the cow and is a bit tough but flavorful.
1 skirt steak
Olive oil for brushing
Salt to taste
Fresh ground black pepper to taste
Prepare the marinade (recipe follows). There is usually significant fat on the one side of the meat that should be removed.
Place the meat in a zip-top plastic bag with the marinade. Zip the bag almost closed, expel as much air as possible, and zip the bag fully closed. Marinate the meat refrigerated for 24 hours, turning once. Prepare the grill for direct hot cooking. Remove the meat, discarding the marinade. Grill the meat directly over the fire, lid closed, for 3 minutes per side.
For serving the meat can be thinly sliced or served as larger portions. If slicing or cutting bites to eat, cut across the meat’s grain. The grain runs parallel to the long dimension of a skirt steak.
Marinade
Juice and zest of 1 lime
Juice and zest of one orange
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon powdered coriander
1/2 teaspoon powdered cumin
Combine all ingredients and thoroughly mix.
