Burger with Indian Spices
Hamburger steaks get old unless you vary the seasoning from time to time. Even if you are using a bun it is good to vary the seasonings and condiments. The Yogurt Sauce below can be substituted for mayonnaise and supplemented with sliced tomatoes and onions.
1/4 yellow onion, minced
4 small cloves garlic, minced
2 tablespoons grated fresh ginger
2 banana peppers, seeded and minced*
2 teaspoons garam masala
1/4 teaspoon turmeric
1 pound ground lamb or beef
*Note: for a milder version remove the membranes from one or both chilies.
Prepare the yogurt sauce (recipe follows). Combine all ingredients and thoroughly mix. Divide the mixture into thirds and form each portion into a patty.
Prepare the grill for direct cooking with a hot fire. Grill the burgers directly over the fire, lid closed, for 3 to 3 1/2 minutes per side, depending upon the desired doneness. Serve with the Yogurt Sauce.
Yogurt Sauce
3/4 cup plain yogurt
3 tablespoons chopped fresh cilantro
1 teaspoon fresh lemon juice
1/4 teaspoon salt
Combine all ingredients, blend thoroughly, and refrigerate for at least one hour.
