Basil-cheese Stuffed Grilled Chicken




Chicken is commonly on the menu in most households these days, so a variety of chicken recipes are necessary. This is a relatively simple stuffing procedure that does not take long nor does it require much skill.


1 large skinless, boneless, chicken half breast

Olive oil for brushing

Salt and pepper to taste.


Prepare the stuffing (recipe follows). Lay the chicken on a flat surface and insert a knife, almost, but not through, the side of the middle of the chicken.





Cut sideways almost to the edge, then cut in the opposite direction to form a pocket.





Use a spoon to pack the stuffing into the pocket.





Pull the pocket closed and insert toothpicks along the pocket edge to hold it closed.





Prepare the grill for hot direct cooking. Place the chicken directly over the fire and grill for 4 minutes per side, lid closed. Continue grilling the chicken for an additional 2 minutes per side (12 minutes total).





Stuffing

1 slice multigrain bread

2 tablespoons olive oil

3 tablespoons Pecorino Romano cheese

2 tablespoons chopped fresh basil

1/4 teaspoon salt


Process the bread in a food processor to fine crumbs. Add the breadcrumbs and oil to a small skillet, stir to mix. Sauté over medium heat until the crumbs are browned (stirring as required). Let the crumbs cool slightly then combine them with the remaining ingredients. Stir to mix.
