Barbecued Pork Steaks




Pork steaks or pork blade steaks are slices of the Boston Butt from the hog’s shoulder. I prefer a Kansas City-style barbecue sauce with them, that is thick, slightly sweet, and slightly spicy. They have veins of fat running through them, but most of that is rendered with this recipe. Be sure the fat is rendered before adding the BBQ sauce.

Creole Seasoned Salt, or your favorite butt rub

Coarse ground black pepper




Prepare the BBQ sauce (recipe follows). Season the steaks with Seasoned Salt and pepper. Prepare the grill for medium-low direct cooking. Grill the steaks for 16 minutes, lid closed, turning every 4 minutes.




Begin basting with sauce and grill for and additional 8 minutes, lid open, turning every 4 minutes.




Kansas City-style Barbecue Sauce

3//4 cup ketchup

1/2 cup distilled vinegar

1/2 cup water

1/4 cup brown sugar

1 bay leaf

1/4 teaspoon celery salt

1/4 teaspoon chili powder

1/4 teaspoon ground allspice

1/4 teaspoon ground cinnamon

1/4 teaspoon black pepper

1/4 teaspoon cayenne

1/8 teaspoon ground cloves


Combine the first two ingredients and thoroughly blend. The ketchup will tend to clump and not dissolve in the water. Add the remaining ingredients, blend, and simmer for 10 minutes.
