Grilled Pork Tenderloin
The pork tenderloin is an excellent cut of meat for grilling. It is a tender, juicy, low fat cut. In fact, it is lower in total fat than a skinless chicken breast.
2 pound pork tenderloin
3 tablespoons olive oil
4 cloves of garlic, crushed
4 6-inch springs of fresh rosemary
Salt and coarse ground black pepper
Combine the oil, garlic, and rosemary in a small saucepan and simmer over medium-low heat for 5 minutes, then set off the heat. Let the mixture stand at room temperature for 1 to 4 hours, the longer the better.
Prepare the grill for hot indirect heat. Trim the meat of visible fat, brush with the seasoned oil, discarding the garlic and rosemary. Season with salt and pepper.
Place the meat directly over the fire (lid closd) and cook for 4 minutes on each of its 4 sides (16 minutes total). Move the meat to indirect and cook for an additional 8 to 12 minutes until done.
