Ham Steak Grilled with a Copper Mat
A friend told me about a grill accessory he thought was incredible, the Yoshi Copper Grill & Bake Mat (available at Sam’s Club). They lay on top of the cooking grate and are machine washable, but must be used at grill temperatures below 500°F. To test one, I grilled a ham steak with a thin basting sauce.
1 ham steak, 1/4 inch thick
Prepare the basting sauce (recipe follows). Prepare the grill for direct cooking (400°F in this case). If using charcoal or wood there must be no flame, only coals. Place the mat on the cooking grate after the grill is hot. Place the ham on top and baste with the sauce. Grill for 6 minutes, then turn and baste again. Cook for an additional 6 minutes. Basting with additional sauce.
The ham did well and was tasty, however I will have to experiment more before I make a final decision. The sauce burned on the mat, but not on the meat. It did clean easily with hot soapy water. This is a plus if using thick sauces that are likely to burn or make a mess on the grill. I purposely used a sauce with honey as a test. Pictured is the mat after grilling and washing.
Sweet Mustard Basting Sauce
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoons white wine
Combine all ingredients and thoroughly blend. The wine was primarily to thin the sauce.
