Grilled Portobello Pizza Margherita
Pizza Marghretia is a pizza with just basil, cheese, and tomato for a topping. In this recipe a Portobello mushroom is substituted for the pizza dough. Pizzas normally uses mozzarella cheese, sliced provolone from the supermarket is used here for variety.
2 Portobello mushrooms, stems removed
1 large or two smaller tomatoes.
8 fresh basil leaves
2 slices of provolone cheese
Olive oil for brushing
Salt and pepper to taste
Prepare the grill for indirect cooking over a medium fire. Slice the tomatoes into 1/4 inch thick slices. Brush both sides of the mushrooms with oil. Season the tomato slices and both sides of the mushrooms with salt and pepper. Grill the mushrooms directly over the fire, gill side up for 4 minutes. Turn, grill gill side down for 3 minutes, and move to indirect gill side up. Lay 4 basil leaves on each mushroom.
Top with a slice of cheese, and then tomato slices. Cook on indirect for 1 minute, or until the cheese melts.
