Grilled Strip Steak
The strip steak, New York strip, or Kansas City strip is one side of the T-bone. It has excellent flavor and a common restaurant item but is tougher than the other side of the T-bone, the fillet. It is best cooked medium rare, but not more than medium or it will be quite tough.
Strip steaks
Olive oil for brushing
Kosher salt
Coarse fresh ground black pepper
Prepare the grill for direct cooking over a very hot fire (600°F). Immediately before cooking, lightly brush the meat with oil and season with salt and pepper.
Grill directly over the fire for 4 minutes per side for a medium rare 1-inch thick steak.
