Grilled T-bone Steak
These steaks are interesting because the meat on either side of the bone have different flavors. If the tenderloin side is 1 1/2 inches wide or more it is termed a porterhouse steak, but they have the same flavors. Although no longer as popular as they once were, they are both excellent grill items.
T-bone steaks
Kosher salt to taste
Coarse-ground black pepper to taste
Season the steaks with salt and pepper at least 1 hour before cooking. Let stand at room temperature.
Prepare the grill for direct cooking on a hot fire. Grill the steaks for 5 minutes per side for medium rare (1 1/4 inch thick steaks).
