Grilled Tuna with Butter, Lemon, and Caper Sauce

Over cooking destroys the flavor of tuna. If you are worried about rare, or even medium rare, choose a different subject (rare tuna is 115°F while medium rare is 125°F).
Tuna steak or steaks
Olive oil for brushing
Creole Seasoned Salt, or simply salt
Fresh ground black pepper
Prepare the sauce (recipe follows). Prepare the grill for direct cooking over high heat. Lightly brush the tuna with oil and season with salt and pepper.

Grill the steaks directly over the fire for 4 minutes per side, then turn and grill for an additional 2 minutes.

To develop this recipe, I used a 1 pound 2.5-ounce steak that was 1 ¼ inch thick. Other thicknesses will require a modification of the cooking time. This quantity of sauce was adequate for the amount of tuna cooked, and that will serve three people.
Butter, Lemon and Caper Sauce
3 tablespoons butter
4 teaspoons capers
1 teaspoon caper juice
2 teaspoons lemon juice
Melt the butter and add the remaining ingredients. Hold warm until serving.
