Smoked Turkey Salad
To me, cooking is like playing with a chemistry set, always experimenting. I noticed that the ground smoked turkey I used for Smoked Turkey Pâté (Dec 19, 2018 Blog post) tastes similar to ground ham. My mother-in-law was locally famous for her ham salad. So, the last time I smoked turkey drumsticks I did extra, ground it, and froze it. My wife helped me reproduce my mothers-in-law’s ham salad, with some experimentation.
4 cups ground, smoked turkey (2 large drumsticks)
2 – 3 hardboiled eggs, chopped
1/4 cup sweet pickle relish
3/4 cup lite mayonnaise
1/3 cup salted peanuts, chopped
1 teaspoon salt
Fresh ground black pepper to taste
Combine all ingredients and thoroughly blend.
It goes well on crackers as a snack or on bread for a ham salad sandwich.
