Roasted Acorn Squash

Winter squash, including acorn, are vegetables with a somewhat high starch content that are excellent for grilling. They are also high in fiber, vitamins, and antioxidants, which makes them healthy foods.
Serves 4
2 acorn squash
Extra virgin olive oil for brushing
1/2 cup honey
1/2 cup red wine vinegar

Cut the squash in half through the stem and scoop out the seeds and membranes. Place the squash cut side up in a microwavable dish. Lightly salt them and add 1/2 cup of water to the dish. Prepare the grill for single-sided indirect cooking with a medium-hot fire. Microwave the squash on high (100 percent) for 6 minutes. Combine the honey and vinegar in a measuring cup and whisk to dissolve the honey. Brush the cut side of the squash with olive oil. Grill the squash cut side down directly over the fire for 4 minutes. Move to indirect, cut side up. Pour the honey-vinegar mixture into the squash cavities, brushing some on the rim. Grill the squash for 30 to 40 minutes, or until fork tender.
